With all of the Coronavirus talk lately, I thought I’d be a bit more light-hearted today. This is not to downplay the severity of what’s happening in our world. Trump’s address last night was downright scary.. But I do hope this takes your mind off of it for a moment.

Perhaps the most formative experience of my childhood was being in Girl Scouts. Granted, our Troop was anything but outdoorsy, mainly because our mothers who were in charge were somewhat high maintenance and passed their preferences on to us.

To this day, I have never slept in a tent.

Anyway, one of my favorite times of year was Girl Scout Cookie Time. I have vivid memories of having to call my mom’s friends and say, “It’s Girl Scout Cookie Time! Would you like to place an order with me?” Of course, this was very much out of my comfort zone, but it truly formed in me an entrepreneurial spirit. Each Cookie Season brought incentives and you’d better believe I wanted each and every one. Perhaps my most prized possession was a bumble bee tee shirt that I earned from cookie sales. I cherished that thing and it was the ultimate status symbol in Girl Scout world.

I’m still in touch with most of the ladies in the photo below, thanks in part to social media, but also because they’re just good girls who I’m happy to be friends with! Plus, we all have a lot of dirt on each other, so we’re kind of obligated to keep each other close ;).

Yes, we were Canada for World Friendship Day. We were clearly just like real Canadians and made maple leaf-shaped sugar cookies. Sigh.

Since we’re all perhaps doomed to quarantine, today I wanted to share a way to up the ante of the Girl Scout cookies you have in your freezer. I can never say no when they’re being sold, so I have TON. Not that I can ever get sick of Girl Scout Cookies, but it’s sometimes nice to switch things up a bit, ya know?

If you happen to not have any Thin Mints, get out and get some before the lockdown! I’ll bet you there are plenty of adorable Girl Scouts outside every grocery store this weekend, hoping to sell out before the madness. In all seriousness, Keebler’s Grasshopper cookies will work, but nothing NOTHING compares to the real Thin Mints.

It’s all quite simple. Ahem…

Make a batch of Nestle Tollhouse Cookie Dough WITHOUT THE CHOCOLATE CHIPS AND NUTS (does anyone actually ever use the nuts anyway…?). Then, divide the dough in to two bowls. In one, add 3/4 cup white chocolate chips and a smattering of green sugar (if you want). In the other, add a tablespoon of cocoa, mix, and then add 3/4 cup Mint Dark Chocolate M&Ms. Then, take two balls of dough and form it around a Thin Mint until it’s completely covered. I would have taken photos of this, but it’s a two-hand job and I couldn’t take pictures.

This is an important step: Put the unbaked cookies in a plastic bag and refrigerate for at least two hours and up to over night. Because you were handling the dough, it got really soft and needs to be firmed up again before baking.

Preheat the oven to 350. Bake for ~13 minutes. Let cool for 2-3 minutes on the baking sheet before transferring to the cooling rack.
