Happy Tuesday, friends! This will likely be my last blog post of 2020 since so many people are away from their computers the week between Christmas and the new year! I have so many thoughts this year.. It’s a weird year but I honesty don’t feel like I’ve been gipped. I’ll write more about this in detail later, but all in all, it wasn’t a bad year at all.

To switch things up a bit, I thought I’d share our Christmas Morning Breakfast Casserole. I also used to make it when we’d volunteer at the homeless shelter and people tend to love it. You can prepare this the night before if you want! I hope you enjoy it too if it makes its way to your Christmas morning table (or any other time of the year!

What you need:

  • 8 hamburger buns (ripped in to small pieces)
  • Everything But the Bagel Seasoning
  • 1 cup shredded sharp cheddar
  • 10 eggs
  • 1 1/2 cup milk
  • 8 oz cream cheese
  • Optional- cooked breakfast sausage or bacon, crumbled

Preheat your oven to 325 degrees

Unless you’re preparing this the night before… In which case, don’t.

Place half of your hamburger buns in the bottom of a greased 9×13 pan and sprinkle a generous portion of Everything But the Bagel Seasoning on it.

Top with half of your cheddar and bacon or sausage if you’re using it.

Repeat with the other half of the hamburger buns and cheese.

Then use two spoons to put bits of cream cheese around the top (trust me on this one)


Then beat your eggs along with the milk in a mixing bowl and pour the whole thing evenly on top of the hamburger bun mixture.

Cover with aluminum foil and either refrigerate over night or pop in the oven.

Bake covered for 45 minutes at 325. Remove the foil and continue baking at 350 for an additional 10-15 minutes. Enjoy!
