If you follow me on Instagram stories, you know that I’ve been doing this detox program called 30 Days to Healthy Living with Arbonne , or, simply “Arbonne 30,” and it’s INTENSE. I cruised in to the first week without any issues. I was IN for it, and I was going strong. Then, it started to get hard. And then, I really wanted chicken fingers…

Let me back up. In Arbonne 30, you eliminate gluten, sugar, dairy, and soy, as well as a few other, minor, things. You supplement a meal or two a day with the Arbonne protein shakes, which are insanely delicious, especially when blended with berries and coconut milk, which I will shut up about never. You also get drink detox tea and fizz sticks, which are great and all, but sometimes you just really want chicken fingers.

So, I sought out a way to make chicken fingers without being a dirty cheater.

This is all way too much information…

I went to the grocery store to get chick pea flour, but they didn’t freakin have any and I wanted chicken fingers stat. SO, I made my own flour. And it worked. And it was delicious. And I hope you really, really enjoy it, even if you’re not on some detox like I am. Also, I apologize in advance for never remembering to measure anything. Ever.

I’ll also note that I made the roasted chick peas a few days ago, and they were seasoned with curry. You can use pretty much any of your favorite seasonings on the roasted chick peas, which will (obviously) flavor your chicken fingers. Another favorite of mine is the Chili Lime seasoning from Trader Joe’s. It would be really good in this.

What you need:

  • 4 boneless, skinless chicken tenderloins
  • A handful or so of roasted chick peas
  • 1 egg
  • EVOO cooking spray
  • An air fryer
oh heyyy, unintentional product placement!
  1. Take a meat mallet to your roasted chick peas. When you think they’re smashed enough, smash them some more. You want the “flour” to be as fine as you can get it.

2. OK, here’s your setup. Scramble your egg in one bowl and put the chick pea flour in the other. Dredge the chicken in the egg wash and then the flour. Repeat as necessary.

3. Put your “breaded” chicken fingers on the rack of your air fryer and spray the hell out of them with EVOO cooking spray. Flip with a fork and spray them again.

4. Air fry them for 7-10 minutes, until golden brown.

I served it with this stuff from Trader Joes, which takes all of five minutes to prepare and is delicious. It’s in the freezer section.
