Few things make me happier than discovering a new bit of culinary genius.  On a recent trip to New York, I visited the Chelsea Market for the first time.  Note that I have been to New York more times than I can count (it’s only 3.5 hours away from DC, and I have several friends who live there), and I HAD NEVER BEEN TO THE CHELSEA MARKET.  #notOK.  Anywho, at the Chelsea Market is a place called The Filling Station, which has a bunch of infused vinegars and olive oils.  I am not usually a peach fan, but I could not get enough of the peach infused vinegar.  I had to invent a salad to go with the amazingness of the vinegar…  Allow me to share…

  • Spinach
  • Blueberries
  • Chopped Toasted Pecans (I got mine from Trader Joe’s)
  • Crumbled Blue Cheese
  • Crumbled Bacon
  • Peach-Infused Vinegar and a little drizzle of EVOO

Toss ’em together.  Enjoy!!!
