Is anybody else feeling like summer is more hectic than the school year sometimes?  My gosh, for as much as I love the chill nature of summer, I feel like I’ve been running around like a mad woman.

Which is why, blog babes, I came up with this delicious and not-bad-for-you recipe.  My boyfriend is a big fan of the Sweet Fire Chicken at Panda Express, so I tweaked it to make it healthier.  Honestly, it doesn’t taste much (if anything) like the Sweet Fire Chicken…  The main ingredient in that is like 90% sugar.. No ma’am.  So here we go.  Enjoy!

Serves 1-2 (I’d say one person for dinner and two people for lunch)

  • 2-3 boneless skinless chicken tenderloins
  • Pepper
  • 1/4 cup diced bell peppers
  • 1/4 frozen diced pineapple
  • 1/2 cup cauliflower rice
  • hot sauce of your choice (the Trader Joe’s Habanero pictured below is reeeeeally hot.  I’ll tone it down with Frank’s in the future)
  1. Pepper the chicken and cook over medium heat.  Dice with your spatula and wash your spatula before the next step…

2. When the chicken is almost cooked through, add your peppers and pineapple.  Yummm.  It will start to smell amazing.  Cook until the chicken and pineapple are slightly browned.  Do not drain.  It will all be amazing when it’s all together.  

3. Microwave your cauliflower rice for 2 minutes or until cooked through.

4. Serve your chicken and pineapple over the cauliflower rice.  Toss with hot sauce.

This is ready super fast and tastes amazinggggg.  Enjoy!
