When you’re cooking for one, it is important to remember that life is more than prepackaged freezer meals.  I can remember life with roommates in which several people lived off of Smart Ones.  Now, I’m not knocking Smart Ones..  Sometimes they have merit..  And, well, their mac and cheese is delicious.  But, if you’re looking for a more homemade option, look no further than your CrockPot.

This past weekend, I vowed to make as many lunches as possible.  So, I went to my trusty Pinterest and found two recipes I’d been wanting to try…  I also decided to make a spicier version of a recipe I had tried.  I made a grocery list, and went to Wal Mart (don’t judge).  All day Saturday was spent Crocking and cooking.

Here are the recipes I made:

(I subbed cream cheese for the sour cream)

OK, so now you have all this soup… Now what?  Let it cool and then portion them in to freezer baggies.

Here is what is currently in my mini fridge at work.. Looks appetizing, huh?

These three recipes are enough to make lunches for about 3-4 weeks, depending on how your portion them…  And each recipe is amazing.  Enjoy!
